While South American MATE is considered a herbal (the bush is a member of the holly family), it contains caffeine (but is thought by most to provide energy without the jitters), and it is the national "tea" of choice in Argentina, Brazil, Uruguay, Paraguay, Bolivia, etc. Our Mate is the traditional Argentine dried, chopped, and ground leaf mixture called yerba. Yerba Mate can be brewed like any tea, or it can be done in the South American custom of placing leaves in a gourd (also known as a guampa), then using a "bombilla" which acts as both a straw and a sieve. The submerged end is flared, with small holes or slots that allow the brewed liquid in, but block the chunky matter that makes up much of the mixture. The beverage is served in s social manner, where the same gourd/bombilla is shared in turns among all. The leaves are re-infused many times as it's passed around. Tangy, herbaceous notes, with faint hint of tobacco and grass.

Package size is 3 ounces of full leaf tea, which yields approximately 37-38 first cups. Tin size is 4 ounces which yields about 50 first cups. Bulk one pound is available for about 200 cups.
BREWING: Full teaspoon for every 8 oz of boiling 212°F fresh water. Steep for 5 minutes or longer to desired taste. A second or third infusion is possible by increasing steep time one minute each time.
