A fragrant and flavorful STEAMED GREEN TEA from the GanTong Temple on Cangshan Mountain, outside Dali, in Yunnan Province of China.  This “GanTong Tea” is still made by monks and workers for sale at some Dali area farmer’s markets. It would be safe to say that it is extremely rare outside of Dali.  This version is the steamed, lighter, grassier, more Japanese-like green tea.

A fragrant and flavorful STEAMED GREEN TEA from the GanTong Buddhist Temple on Cangshan Mountain, outside Dali, in Yunnan Province of China.  Legend says that a thousand year old tea garden used to be adjacent up the slopes from the temple, a left over from the Ming Dynasty.  Today, some large 10 foot wild and old tea tree decendants are found in the small forest up the walkway to the temple grounds, and three much older tea trees are fence protected.  This “GanTong Tea” is still made by monks and workers for sale at some Dali area farmer’s markets. It would be safe to say that it is extremely rare outside of Dali.  Two versions are produced: 1) Pan-fried, darker, slightly roasted, more typical Chinese green tea;  2) Steamed, lighter, grassier, more Japanese-like green tea. In Yunnan Province, green tea or “MaoCha” could be used to eventually age/ferment into PuEr tea.  This is a very special and limited supply.  We purchased a small amount of each variety (that we could carry home) at the farmer’s market in the village of Xizhou, just north of Dali.
 
AVAILABLE AS: 2 OZ Package
Package size is 2 ounces of full leaf tea, which yields approximately 25 first cups.
 
BREWING: 1 teaspoon (about 2.5g) for every 8 oz (240ml) of 180°F (82°C) fresh water.  Steep for 2-3 minutes to desired taste.  3-4 or more infusions are possible by increasing steep time 30 seconds to one minute each time.
